Chef Rey, this is a nice departure from traditional Chamorro Chicken Empanadas. It makes sense since Chicken Kelaguen Tacos (Kelaguen folded Taco style in Corn Tortillas) is an old Chamorro favorite. Those are often found at local village markets in the Marianas Islands, although younger Islanders prefer the Sweet Flour Tortillas these days. Good job. The dough looks really nice, not too thin, not too thick. So does your Coconut Dinanche Sauce. I've never had Empanadas with a hot sauce side because usually the spicy Chili Peppers were added to the Chicken Chalakilis filling ( traditional Chamorro Empanada filling). Good addition for your style though if you didn't add Chili Peppers to your Chicken Kelaguen beforehand. How long have you lived and worked on Guam or one of the other Marianas Islands?
