Use Evaporated milk combined with heavy whipping cream in a ratio of 1.5 evap milk to 1 heavy cream in a non stick or steel bowl. Boil it then continue stirring it for three more minutes. Add Alum (phatakadi) powder (ratio of 3/4 tsp to 1 litre of mixture) and continue stirring the mixture until it curdles in milk fat solids. Don't add all alum at once. Add a little, stir some, add some more and stir. If you are already getting milk curdling then you dont' have to add the remaining alum. It depends on the type of milk and fat. When all the water is evaporated and remains only milk solid fats, that's thabdi without sugar. The only difference in mawa and thabdi is that mawa is without Alum powder. The reason to add alum powder is you can get a mixture texture of soft granules instead of smooth (sometimes a little sticky) and fine texture. The reason they use thabdi in India is that the market mawa is a lot of times non natural (artificial) or made with goat milk which is sticky in nature. Pure mawa made from buffalo milk is never sticky but still without the soft fat granules. Granular texture is only achieved with phatakdi or alum powder. If you have any questions, please reply.
@@tfinavia01 thanks Tushar for such a nice explanation, unfortunately we don't get alum as well .... I tried making mawa from powder milk n yes it was sticky in mouth a lot.... many basic raw Indian ingredients we don't get .....if any other idea to get into please let me know....thank you.....
@@JessicaUk Alum can be found on ebay.com, just search "shaving alum block". In UK they use it as after shave rub. It's all the same, Aluminum phosphate. However, by following the recipe here ( ua-cam.com/video/Rz8KZ9G4XbE/v-deo.html ) mohanthal came out really great. This recipe uses no mawa. Instead you can use warm milk (full fat). If not you can also use half and half (half heavy whipping cream + half whole milk). Just try using 2 cups of coarse or fine besan and let me know. I'm sure it will come out great.
