To butcher a full pig under 15 minutes is truly incredible. It is somehow very satisfying to watch the chef work on this pig with his knives, hope to master his level of skill one day. Thank you for the epi Aden!

Am I alone in hoping they don't throw away the trotters and such in the bucket? I can hear the anguish of the beans and peas and other dried staples in my pantry.
I would imagine they possibly use it for stocks and such, restaurants of such high quality aren't likely to let it go to waste if it has flavour to impart. That's obviously just speculation on my part though
No wonder it's expensive with that much trimmings... +60 percent seems to be tossed in the bin. Ofc most of it goes into sausies, mince and stock but still...
i thought you'd get the whole hog on the spit and eat it in one sitting! as for those who are faint of the heart....well this is how meat is processed....
