You can't get any better than that right there! An older gentleman told me years ago the same thing about the cornmeal forming a ball in your hand, that's perfect meal! Also he said the dryer the corn was the less grits you would have. I have that exact mill that I hope to restore and use one day, I have a belt pulley on my 8n that should turn it with no problem. Amazing, you have perfected the 1940 Grist Mill operation as good as the day it was new. I'm so glad it has worked out fantastic for y'all. I'm still waiting for the Utility engine for my portable set up.
That is some beautiful corn meal and grits. My grandparents used to raise their corn and then take it to a local grist mill to get it ground. My grandfather's favorite supper was cornbread and buttermilk. We also had grits for breakfast a lot of mornings. Good memories.
You just gave me an idea. I can make my dad some cornbread for Christmas, I have to try to make cornbread stuffing, but we never measured or kept track of the spices we used. Lol he just grabbed stuff he thought would taste good, except now he can't handle spice (hot) anymore, so it'll be tricky. But that's 1 thing I didn't ever make with my baked goods.

Just thinking should you put some sort of collar around the container on the ground to prevent any of the grind corn from not dropping straight down ? Looks like some is landing on the ground. I like the idea of giving food as gifts for Christmas.
Instead of buying cloth bags to gift the corn in, get cotton painters drop cloths at the hardware, often 9x12ft for
Maybe one of your grandchildren can make the cotton bags.
