Very interesting to hear what you think about Starlink. We’ve been looking into it and will certainly give it a go if our (future) house doesn’t have fibre.
Honestly go for it if fiber isn’t an option. You can cancel it anytime and sell the kit second hand and make a bit of money back if ever you don’t need it. One common objection is that it doesn’t work well in bad weather but we’ve had no issues in the worst of storms.
As a Frenchman I loled at the missing mint sauce for the lamb. Meat with mint sauce is, in France, a stereotype of "horrible" English cuisine. It's even used in the "Asterix chez les Bretons" comic book : - C'est ça le rieur sanglier ?... Il n'y a pas de quoi rire ! - Obélix, mange et ne fais pas de commentaires ! En Bretagne, il faut faire comme les Bretons ! - Mais, bouilli avec de la sauce à la menthe, Astérix !... Pauvre bête !... - Is that the laughing boar?... There's nothing to laugh about! - Obelix, eat and don't comment! In Brittany, you have to do as the Bretons do! - But, boiled with mint sauce, Asterix!... Poor beast! Well, actually, I've never tried lamb with mint sauce, maybe I would even like it ! 😀
That's so funny 🤣 The English do have some odd requirements for eating meats... apple sauce for pork, cranberry sauce for turkey and horseradish for beef to name a few. So much so that without the right condiment, some won't eat the meat alone 😂

There, the inn is called "The jolly Boar" Obelix : "This is a bit of a jolly old bore, what ! Asterix : Eat up, Obelix, and don't pass remarks. In Britain you must do as the Britons do. Obelix : But boiled with mint sauce, Asterix ! Poor thing ! It is so difficult to translate humour...

Starlink isn't the best way in french country side, 5G internet box is way quicker 1.1Giga and cheaper 29 euros/mounth, Bouygues seems the best ,Orange, SFR etc.. have to choose among them!
It has it's limitations for sure. However, 5G isn't available where we are so the speeds would only be as good as 4G which is superior with upload speeds but inferior with download speeds. Which makes uploading vlogs slow but downloading shows etc more than adequate 🤩 So it depends on your needs.
