The sliders underneath the curve are good for adjusting the sort of bias of the curve between each point, the gradation between shadows/mids/highlights, which you can't do solely by manipulating the positions of the points without adding more between them. Good explanation though, particularly with the colours in the rainforest.
To add, when making these adjustments on the curve hold SHIFT while moving a point to only move vertically, hold ALT to make the movement in all directions slower making it easier to fine tune(tone) and use ALT+SHIFT to move slow vertically only.

Are you asking how the 3 colour curves differ from editing colour in the HSL tab? Simply they are just different ways to manipulate colour. There is many ways to play with colour in Lightroom. They have differences but you can also achieve similar results in different ways. HSL gives you more options to play with colour because you have hue, saturation and luminance to play around with. The 3 coloured curves inside the tone curve allow you to make subtle colour changes or corrections! Check out my video on Colour grading if you don’t quite understand. I try to explain 5 different ways you can edit colour. You don’t need to adjust all of them, but I use a combination of them

Which version of Lightroom are you on? Just make sure you don’t have the slider adjustments open. You can also adjust the tone curve using sliders you may need to untick something or click across to get back to curve adjustments! Hope that makes sense! Should be on point adjustments by default though

If you bring the highlights (or more specifically, the white parts) of the picture down like that, I would worry that my photos look a bit grey and don't pop nicely on print. Do you have any experience on this?
Thank you so much for the feedback :) and thanks for watching! Great question! I don't tend to have that issue when printing, although it would depend a little bit on the individual image! In saying that I also sometimes edit some photos slightly different when printing them. In general a handy tip to make sure your image is balanced is using the shadow and highlight clipping (shortcut J) - I find if there is the very tiniest bit of highlight clipping showing up (or just off) it's pretty balanced for how I like!
As a new photographer, I have NOT touched this because I just did not understand it. This is the absolute best video I’ve seen when it comes to explaining it! I feel 100x more confident going in and playing with the curves now 😭
