I’ve cooked steaks countless times and been in the kitchen for longer, I can assure you of that. Just with a wagyu there is so much fat from marbling, plus the large amount of butter added for basting that a lot of fat ends up in the pan anyway, and I see “a touch of oil” as a 1sec drizzle. There was a fair coating in the pan at the start of searing, and by the end the volume of liquid while he was basting was fairly significant, that’s all.

its not ruining its just using methods that are used for lower grade on higher grade which you arent supposed to do since those technics are really only there so that the cheaper grades get more taste which wagyu has in itself normally
With high quality Wagyu you just sear it in oil, add salt and that's it. No butter, no pepper or rosemary, no red wine reduction. Basically this is like buying a Ferrari and then adding an exhaust to it. It is already perfect, adding anything to it is taking away from it.

Food is about eating with your eyes, mouth, and heart. If you find a way that is "wrong" but taste right to your heart, that's all that matters really.
The reason this is "wrong" is because the point of wagyu is to let the flavor of the beef shine, not the flavor of anything else. You don't need oil in the pan, because it's fatty enough to fry itself. You don't need any sorta red wine reduction, because that adds additional flavor. You don't need rosemary salt or black pepper, because those add unnecessary flavor. These are good pieces of advice for regular steak, but not for wagyu.
Honestly I’ve had Wagyu twice, (possibly not the best grade) and it just tasted like regular steak to me, if not worse, and I don’t like fat so it was a bad experience all around 😂 And before someone comes at me like “well if you didn’t like it the first time why eat it the second” My mom’s boyfriend is a good cook and since he and my mom both work at a luxury resort they got it for cheap. Basically- I was taught to never refuse the food on my plate Edit: I’m just posting my personal experience so keep that in mind- like I said before I don’t like fat (how it tastes or how it feels) so the Wagyu tasting normal if not worse to me might entirely be because of that fact- due to the marbling.
You sure you had japanese wagyu? Cause you could of had American Wagyu or Australian Wagyu which is much cheaper. Also what grade was it cause A5 Kobe Wagyu is going to be much more diffrent then an A1 wagyu

It was 100% wagyu. I lived in Japan and I tried the legitimate A5 wagyu. It really is just a really fatty steak. It’s delicious the first two bites, but you wanna throw up by the third bite.
