- This poor man's meal is something I grew up eating. It is budget-friendly and is a great way to stretch simple ingredients to feed a family. This soupy Mexican red rice recipe and crispy cheese quesadillas are an easy dinner idea. You can call this a struggle meal, but I call it good eats!

INGREDIENTS
1 cup long grain rice (rinsed)
7 to 8 oz tomato sauce
small piece of onion (chopped)
1 Tbsp chicken bouillon powder
1/2 tsp ground cumin
1/4 tsp black pepper
2 1/2 cups water

I love "poor man meals"!! My dad's was Goulash, my mom's was ground beef w/ egg noodles and whorstshire, then mine is fried potatoes with ground beef!!!
Same with my dad! He was from Hungary and looooved goulash.
The only thing missing were the refrieds for me. This looks so delicious.

I have mashed potatoes with egg gravy (white sauce with sliced hard cooked egg) and some veggies. Very good, my dad used to make it, I'm 60.
I make that gravy and serve it over biscuits or toast. Mmmm, yummy 😋
My comfort food is tacos with sides of rice and beans I'm 75

I'm 74 and sometimes I just make Mexican rice and refried beans and eat it for three days. So good!
Still remember eating a lot of hamburger gravy over toast. Don’t see that anywhere, anymore. Somehow we survived without vegetables 😂

That was my childhood... We are a big family and that meal fed us (or a very hungry army!)
We didn't have much growing up but thank God and my parents that we always had food on the table.

I will use queso fresco, low moisture mozzarella or Oaxaca cheese. It usually depends on what I have available. :)
You can also make some white rice and put some medium salsa in it and mix it in. I have made that many times
Oh this looks divine, I think my toddler would like this as he's into tomato sauces but fussy about rice, what a great idea. Saving this for sure. You don't have to use meat to call something a meal.
I don’t think you understand the concept of quick and easy meals you can make from shelf stable items, ie: poor man’s meals.
I think the name "poor man meals" should be retired. There are regular meals and splurge meals.
I looked up the term, it's nothing negative :)
