It's not fair to expect a game to have zero cheese. For me, the qualifiers for whether a cheese strat ruins a fight are: How easy is it to discover/pull off the cheesey strategy, and how long does it take? If a cheesey strategy is really difficult to find to the extent you're probably not gonna discover it on your own, or it requires tons of really hard inputs that takes practice to get down, then you deserve an easy win for putting that much effort into the fight.
But if there's some incredibly easy cheese strat, like "You can just spam ranged attacks and the boss will never attack you back," then that does kinda ruin the fight, because no matter how good the fight is the "normal" way, you know that you can easily beat it by just standing back.
