In each level, there was at least one stage that you had to complete with old-school jumping tactics to earn a Shine... but once you did that, you could then replay that stage WITH your "enhanced" jumping abilities restored in a second challenge, against the clock, to earn a second Shine.
I never played that one. Sounds fun.
