Let's go to Elazığ this time and tell about Kömbe, one of the most delicious opening pastries of that region.

Ingredients for Kömbe
For the dough
1 egg
1 glass of yogurt (245 Gr)
half a glass of oil (85 ml)
3.5 cups of flour (380 Gr)
1 teaspoon of salt (8 Gr)
Ingredient
5 tablespoons of butter (200 Gr)
half a glass of oil (85 ml)
1 large onion
450 grams of walnuts
a mixture of yoghurt and oil for brushing
Baked in the oven at 200 degrees for 25-30 minutes
For the dough, add an egg, a glass of yogurt and half a glass of oil to the mixing bowl, mix and add salt.
We add a total of 3.5 cups of flour little by little and start kneading.
We collect the dough, cover it and let it rest for 2.5 3 hours.
The more the dough rests, the better it opens.
While our dough is resting, let's prepare the stuffing.
Add 4 tablespoons of butter and half a glass of oil to the pan.
After the butter melts, add a finely chopped large onion.
After the onion has been roasted for a while
Add the paste made from a mixture of sesame and poppy, up to 4 tablespoons.
This paste is sold as poppy paste in some chain stores.
After frying for a few more minutes, we take the stuffing from the stove.
Our dough rested
After taking our dough on the counter and kneading it a little,
We divide it into 22 meringues of 30 grams each.
We lubricate the bottom of our tray nicely.
I used a 43 cm tray
To open our dough, we mix a glass of flour and a glass of starch.
And I open my phyllo to the size of a tray
After laying two phyllo dough on our tray, we spread it with the poppy mixture.
After rolling out another sheet of dough, we sprinkle walnuts on this layer as well.
Walnuts are neither too finely chopped nor too coarsely chopped.
Until the last two phyllo dough remains, we spread a mixture of poppy paste on one layer and sprinkle walnuts on another layer.
Spread the liquid on the phyllo before adding the last layer.
After laying out our last dough
In order to spread it on our Kömbe, we add a little oil into the yogurt in a bowl and rub it on the Kömbe.
Bake in the oven at 200 degrees for about 25-30 minutes until our kevbe is nicely browned.
And the result is crispy and delicious, fried like a pomegranate, our kembe is cooked
