I would have to choose one from each generation as they are all full of such great character. The latest generations are unreal for sure but I would have such a tough time deciding on only one. I can tell all of my favourites would have a manual transmission!
It's too hard to choose just a few, you have at least 2 or 3 very special cars in every generation, so there will be always a great model that will be missed in a short list
I believe one of the greatest 911s has to be the Carrera 3.2 CS - limited to around 300 units, power to weight similar to the 2.7 RS and the last 911 without ABS and Power steering, therefore the last of the purist driving 911s.
As a owner of many sports cars over my life since I started driving (with 4 of them being made by Porsche) I can honestly say that while all were great cars and I loved them all, the best one is the 992.1 S version that I feel is about as great as you can get. Manual transmission in all of them. No sports car should be equipped with an automatic transmission. An automatic transmission in a sports car is like dating your cousin. It is just wrong.
The best 911 is'nt from Porsche IMO it's a RUF ❣️😅 The latest RUF Tribute with aircooled engine and the SCR+CTR with carbon Chassis, the shape of the 964 and manual shifting ❕👌🏼 Only the price of around 900.000€ is sad 😜
