    I think you’ll find “creamier” results with plants (garlic, basil) using a less-smooth mortar & pestle, like marble with ridges spun into it or stone (like the molcajete). Glass, ceramic, and SS are wonderfully smooth… great for powdering but very poor for macerating or muddling. Great for pharmacists, less useful for cooks. The rougher surfaces also break things apart faster, like cracked pepper.

    I love my pestles and morters, I have metal, wood and stone. Stone one is my favorite.

    I realized pestle and mortar actually concentrates a flavor rather than food processor that just cuts the herbs.

    I saw a clay mortar with a wooden pestle given to a renowned chef by an authentic Thai cook. I wonder why it’s a thing?

      Interesting. I personally would suggest a nonporous material. Perhaps the clay was glazed.

    Is it really stainless steel? Nope, not good at all. You have nickel and chromium getting in your food. A ceramic one will most likely have lead in it, too, just like glass. Stone and wood are the safest, but it depends on a stone and its origin.
