This was excellent! Thank you! I’d be curious to learn about soy sauces in the same way.

I didn't know all these... and kept my seemingly darker sesame oil in not so dry and cool place... it's smell has changed...very less nutty flavor with an additional not so good smell... it's so costly... and I don't know what to do with it now

I've had that happen too! Try getting a genuine Chinese/Korean/Japanese brand from an asian store (the Korean brand Ottogi is very deep & strong, and not sure how available the Chinese brand Lee Kum Kee is for you but i love that one the most) Western sesame oils don't seem to have any taste no matter how expensive they are!

Try the Kadoya one if you can, it's nice and strong.

I forgot to mention that recently several brands have started to make hot (spicy) sesame oil. You can add it to your stir-fry to give the dish a mild spicy flavor. You can also add it to a soup base for a noodle soup. rb.gy/ukz4ou

Is it tastier to use sesame oil that is nearly FOUR YEARS past its "best by" date, like yours? :) Just kidding, cheers!
