Hi, loved this, thanks! I'm a total beginner and I don't understand why we don't play again these 4th notes along with the chord. For example, G and the C major chord, we'll hold the G 4 beats then there's another G and the chord, we'll play the chord again but just keep pressing the G. I don't understand why we don't lift our fingers and play it again for one count. Not sure if I was comprehensible, lol.
You are welcome! This song is written to hold the long note for 5 counts. It does not matter what happens in the other hand. Here, the other hand happens to be playing chords, but it could be doing most anything else. No matter, the melody must be what it is and that means the long notes are 5 counts long. Look at the words. A word is held for the whole 5 counts each time. If the note were to be played again, it would really need another word to go with it. It sounds better to just hold the word out for the full 5 counts rather than adding in another word or repeating that word again.
I have a question. How fast should i be able to play before i move on through the book? Is the speed in "play with me" fine? Or as a beginner i should play faster?
Each piece is a different speed. I usually suggest the speed in my lesson. The play-with-me section of the video is usually really slow so you need to speed up the piece before moving on.

The speed you go through the book is up to you. Just enjoy each piece and don't be in a hurry to move on to the next piece. You don't need to memorize any songs if you don't want, or you can memorize as you wish.

It is a very subtle difference. The one note is a little bit louder, but not much.
I didn’t know this was for adults I’m literally 15 learning this 😭
