    Hey Will that's a great Paella version and I bet it tastes banging. Try to avoid stiring it too much once the rice and stock are in as a thin crispy browned layer on the bottom is actually desirable. Thanks again.

    Looks great! I'm worried my rice will not cook all the way. I have shoddy luck with recipes like this, but it looks so good I'm going to give it a try.

      I know what you mean Jennifer lol. Gotta be patient. Make sure you cover the pot and the rice will cook :) the concept is like steaming rice on stovetop. Let us know how it goes 🙌👨‍🍳🍚

      Paella rice is supposed to be dry, separated, somewhat al-dente, with a crisp on the bottom (similar to a Persian tagine). Do not stir, since it'll lead the starch to release and cause it to become creamy. Avoid long grain rice since they suck at absorbing the flavors, avoid short-grain since they overcook. Med-grain is ideal. The best rice is Bomba, second place is Senia, third place is Calrosa. Now if you can't do any of these, then go for Spanish rice in a box. If that's also unavailable, then sigh I guess arborio (risotto) rice will do, but keep in mind it's super starchy and gets easily creamy (which is what you don't want). It needs to be dry, which means you should put this in at the verrry last and you should not stir it at ALL. Jasmine rice is too fragrant, Basmati breaks too easily & also imparts its own flavor rather than absorbs it, Sushi rice is too sticky. So due to this unfortunately, people rely on Arborio rice or Parboiled rice as the best alternatives. Now to remove the starch, you can do a pre-soak, but this is typically avoided bc this would require adjusting the quantity of broth and time for the rice to cook. Remember, we want the rice to have time to absorb all the flavors, yet be dry and not stuck to itself. Bomba rice is foolproof for beginners, so I'd suggest trying to find it online. Otherwise try an alternative and be patient with the steps. Paella is a meal that has alot of labor and love put into it, it's important not to rush.

      Lol oh man it’s been hard to find real saffron lately. We have a bulk barn that randomly sells it it’s about $10 for the small box👨‍🍳🙌

      Thank you so much 🙏 it was kind of a special find, I really didn’t need a new pot but it’s handmade in Italy and the craftsmanship is just beauuuutiful so I couldn’t resist 😅

    Yum yum mmmm. Does it have the slightly caramelised bits on the bottom?
    To me, veg paella is a bit like minestrone, you use what veg is in season. Asparagus and baby crisp courgettes at the moment!

    Mhmmm.... More than a paella it seems a risotto. Paella needs a special pan to cook it that is iron made, large and like a baking tin height. Than you add brot and you have to stir it till the end. You cooked it in a clay pot which makes it a risotto. It also is mainly seasoned with curcuma powder. Not easy BTW to make it Vegan.... Thanks for your interpretation of Paella!

      You’re welcome Claudia 🙏👨‍🍳 ooo I saw the iron pan the other day and was tempted to buying it but I just purchased this clay pot and wanted to make use of it lol... the pot is handmade from Italy 🇮🇹🙌 it’s absolutely beautiful I used it to cook the soodubu jjigae in the previous episode too 👨‍🍳
