      @@TastyThriftyTimely hey its was pretty good, veryyyy filling and yummy soup!!! One the other hand, from my experience, rice noodles tend to not absorb much flavor. Is it supposed to be that way?

      @@amyvaichalkar4285 oh good! Thanks for letting me know how it was. And yes I’ve never really thought about it that way but the noodles don’t really absorb flavour. They mostly just bulk the soup up and add a fun element (I have more fun eating noodles than vegetables I guess lol).
      I really like udon noodles which are thicker wheat noodles and buckwheat soba noodles perhaps have a bit more flavour of their own compared to rice noodles but they do usually need to be boiled for a few minutes and won’t fully cook in just the hot water this recipe calls for. If you’re making this again at home though you could try adding a different noodle (cooking it separately for a few minutes and adding it in). They likely won’t take on the flavour of the broth but they may be more flavourful noodle varieties.

      @@TastyThriftyTimely I just had it for lunch with my husband and we loved it!! We used whatever veggies we had in the fridge, so just carrots, broccoli, and button mushrooms. We also added fish sauce and sesame oil to the broth. It was yummy! We are going to make it again tomorrow haha

    Note: check your soy sauce.
    Most soy sauces (unless they specifically state on the label that they're gluten/wheat free) have wheat in it.
    Most tamari sauces do not contain wheat, but some do; again, check the label.

      Thank you for this note. We typically use tamari because soy sauce has never sat well with Bryan (even though gluten isn’t an issue for him). I know so many bottled seasonings and spice mixes can pose a contamination issue for anyone who needs to avoid gluten 😔

    Is the tofu cooked at all

      Not in this recipe actually! You can cook it if you prefer or use something like smoked tofu but I just use plain extra firm tofu cut into cubes. I find that the broth is flavourful enough that I don’t mind the taste of the uncooked tofu.

    How do you ensure the glass doesn't crack on you if you're taking it fron refrigeration and then pouring in boiling hot water?

      These are very thick glass jars that are heat proof so it’s definitely important to ensure that the jars you have can withstand high heat. As an alternative, you could use a heat proof bowl with a lid (I’m thinking something like the Pyrex brand that can be used in the oven). Or, shaking out the contents of the jar into a deep soup bowl before adding the hot water is another possibility.

      If you recycle food jars (pickles, pasta sauces, pesto, olives, etc), DO NOT USE THESE. They aren't made to withstand the sudden temperature shock of even going from room temperature to containing boiling water.
      Save those jars for contents that are meant to be cold, not heated (green salads, pasta salads. desserts).
      Contents that are to be heated will be fine in glass jars that are manufactured for canning; they are made to handle the differences in temperatures.
      Mason is a well-known manufacturer of canning jars and are used by Classico to package their pasta sauces. In fact, Classico uses the most sturdy of the canning jars Mason makes. Their pasta sauces come in 24oz jars and their pizza sauce comes in 14oz jars. Classico also sells a variety of pesto sauces, which come in jar sizes that range from 8.1oz to 13.5oz. The heat-safe jars, like all Mason jars, shows raised areas on the glass displaying the Atlas Mason name and a vertical measurement on the side; look for that for verification.
      As for what to do about refrigerated jars and adding boiling water, take the prepared jar out of the fridge to warm to room temperature before pouring in the boiling water. About an hour, give or take, should do it. The food will stay safe during that time.

      @@chris...9497 Thank you for such a detailed and helpful response. I didn’t know that the Classico jars are so sturdy. I reuse those all the time for storage but don’t heat them. That could be helpful for small amounts of soup that could be frozen and reheated. Other than this pour over noodle soup I tend to just transfer thawed soup to a pot or soup bowl for heating just to be extra safe. Thank you again!
