Bariuma Ramen at Novena Gardens! They have some of the richest tonkotsu broth in Singapore and the best cha shu in my opinion. Also would recommend Sanpoutei, Marutama as excellent options but bariuma has a special place in my heart (and arteries)
wa nice!! ramen review yay! i think i've reviewed most of the ramen in sg on my food IG (about 120 bowls so far). hope to see some new ones featured in yours!
edit: my personal fav in no order are menya kokoro's tokyo mazesoba, sanpoutei's tsukemen and kotteri se abura ramen, enishi's dashi (most authentic ramen store in sg imo), keisuke tonkotsu king (specifically orchid hotel), bariuma's signature
used to love tsuta's shoyu soba but the broth quality/flavour dropped.
-love santouka's toroniku (pork cheek), ramen was alright only.
-most flavourful chashu was surprisingly from kiou ramen in jurong point's &joy foodcourt, ramen was alright only.
-best budget ramen
Keep up the series you are the real deal, foodie and chef at heart. If you can consider some of my favourites
1.Kanshoku Ramen - Truffle broth ramen extremely fragrant maybe cheating with the truffle paste but it's one of a kind
2.Hotogisu Ramen - Oyster based broth with small bits of charred peppers v refreshing and palate cleanser for the next bite
3.Keisuke four seasons - tonkotsu King ramen, soup is thick and the ginger pork is different from the standard char siew which sometimes has a "smell" to it
4. Santouka - toriniku ramen set pork cheeks for the win and a clean tasty broth
Santouka has been my #1 for many many years
many ramen restaurant their char siew which has the 猪骚味。。which is freaking annoying and disgusting.
Recommending Marutama if you like a cleaannnnn chicken based broth
Nantsuttei for a variety of heavier tasting broths esp their garlicky one
Man is relentless with these series! Loving them
Hototogisu Ramen ( Super black spicy Ramen ) definitely a must try! Not usually a big fan when it comes to ramen but when i ate it at waterway point , it INSTANTLY blew my mind on how tasty, flavourful and it packed a punch . Really hope u will feature it !! Have been watching u since u were on masterchef haha
sanpoutei ramen do be a hit, one at shaw house one at holland v, their tsukemen gotta be hands down one of the best in singapore i tried given that its also unique since the dipping broth is a sardine base. Their tonkotsu is pretty thick as well for heavy palates
Do try Hakata Ikkousha Ramen at tanjong Pagar, it is great 👍👍

I'm gonna call it here for Ep1. Alderic is going to travel to Tokyo Japan for a Japan vs Singapore Ramen just like he did for the CKT series.
My personal preference:
1. Best Ramen in Singapore: Keisuke Four Seasons (Bugis Village)
2. Best Ramen in Tokyo: Ichiran Ramen
3. Best Tsukeman in Tokyo: Fuungi
& PLEASEEE order "Hard" Noodles.

Tried this ramen in jakarta's central park mall when it just opened. It was so good. The pork was melt in your mouth good. Standards have fallen now though...

Hakata ikkousha - black garlic broth (i tried both light tonkotsu broth and original black garlic broth. Black garlic broth has more depth of flavor to it and makes you want to come back for more)
Sanpoutei - sardine tsukemen (i tried both their niigata shoyu and tsukemen. Hands down tsukemen wins)
Bariuma - chicken ramen (i find it too rich but it still has one of the thickest broth that really clings to the noodle)

Alderic, you HAVE to try Enishi in International Plaza. Easily the best mazesoba (mixing Ramen, but they call it dandanmian) and dashi Ramen in Singapore.

Nantsuttei at Orchard Central has been my go to for years. I would go for their kara-miso ramen if you are a spice lover. :) if you are looking for something unconventional, tomato miso ramen on the menu is a hit for me too.

Brothers Ramen at international plaza for their amazing LIP SMACKING Chicken Ramen! also their popular and limited per day ramen is VEGEMEN with vegetables. there's no other place (what more by locals) I've came across that cooks as well and dedicated as them all these years, starting from a humble coffee shop stall.

sanpoutei ramen is a must try! their tsukumen is one of the best ramen I had in Singapore! So far I doubt any tsukumen shops in singapore beats that place!!

I try not to eat ramen in Singapore as it's so expensive!!! It's only about $10 in Japan. I hope there will be one here worth the price tag.

Marutama Ramen - Chicken based. Pro tip; ask for the spicy chilli paste they will serve at the side. packs a real punch and instantly changes the broth. Get the basic one then add the chilli in. 2 soups in 1, you are welcome sir.

Hakata Ikkousha Ramen is my go-to! They have 2 outlets one at Chijmes and their og at Tanjong Pagar. Their signature tonkotsu and bonito ramen is amazing - unrelated to the series but their garlic chahan is great too!!
Nantsuttei for their black garlic ramen, add in raw pressed garlic for best taste!

You have to try Ramen Nagi @ION! Great tonkotsu ramen. They also have interesting combinations like their Green King with Cheese and Black King with garlic oil
