I tried this today and it was delicious omg definitely a 10/10, but I added my own twist I sautéed some onion, bell peppers, & celery ( because for some reason I cannot cook without it lol) along with the garlic, and I also added half a cube of chicken bullion and two bay leaves. It was a hit for sure. I will definitely be making it again.
I’m in the UK and I honestly can’t wait to get my spices out to make this lovely dish. I might add some chicken to it so it’s Cajun Chicken and Shrimp! Nom, nom, nom!
I made this for the 4Th, and the family loved it!!! It came out AWESOME. I also made some with chicken for my boys as well. The best and worst part no leftovers!!! No container taking up space in the fridge, but nothing left for lunch the next day!!! Love you brother, always have some great food cooking!!!👍👍👍

Just made this for lunch and Sir, you know what you're doing! The dish has a great flavor, not too salty nor did I add any additional salt before eating! My Neighbor was a Cajun out of Louisiana and he made us Gumbo Shrimp every year. He always had Gumbo Filé (Pure ground sassafras leaves) on the table. Now that is Cajun!!...you can buy this everywhere!!

little note for you to try too.... if you sauté some onions and say green bell peppers you have a OE jambalaya with what you have going there. This is pretty much a veggie-less jambalaya! So good!
I've been doing radiation treatments for cancer for the last 6 weeks, and my sense of taste is absolutely shot. However, I can say with absolute certainty that once my sense of taste comes back, the first 2 meals I'm gonna make are this one (I'm 50% cajun), and your chili cornbread skillet pie. Thanks for the awesome recipes my friend.
Same thing happened to my hubby...got through the chemo by smoking pot...only once did he get sick because he fell asleep and slept all day. He was treated at Stanford University Medical Center and this was back in 1979, long before pot was legalized. I gotta tell you, 'tho, all the RN's and medical technicians, doctors, etc. recommended that he smoke pot (from morning 'til night) and told us if we had any problems finding it, they would make sure they got the pot for him. They even had a special area set up just outside the treatment room on a lovely patio with a lot of greenery because they wanted you to be sure to smoke a joint right before your treatment - how many hospitals do you know that do that? Stanford is about the coolest and modernized medical center we ever encountered; they are truly on top of "everything." We just so happened to have a very good friend who grew it in her backyard, amongst her green beans and many other veggies and she provided the pot for my hubby for the entire year it took for his treatments (Hodgkins Disease, Stage 4SB), at zero cost. How Blessed can one be? The radiation, however, was a totally different story...it really zaps your appetite to basically nothing because my hubby had full-mantle treatments (his whole body vs isolated spots). He lost a tremendous amount of weight and, at one point, only weighed 117 lbs, because he couldn't swallow any food as his throat was absolutely raw from the radiation....he lived on milkshakes for about 6-8 months. It took awhile for him to be able to taste food, again, but it does eventually come back, as did the weight. He never ever complained, again, about having some extra weight on his body as he attributed this to being healthy (directly from his doctors at Stanford). My hubby was very lucky to be treated at Stanford and his two doctors ,(oncologist and radiologist) were the two doctors who, through years of research, developed the cures for Hodgkin's, which is now considered to be 95% curable, when just a few short years before he was diagnosed, it was terminal and he was only 30 at the time. Hang in there, Vern, I'm sending prayers your way 🥰

You touched my soul as it brought back so many memories...the best advice I can give you is to be sure to listen to your docs, don't miss any visits, and do what they tell you to do, have regular visits with a good Nutritionist, and have regular visits with a therapist. They all work hand-in-hand with each other and for you...at least the ones at Stanford did. Seriously, drink milkshakes made with full-fat ice cream and full-fat milk...you need the extra calories when going through your treatments...they go down pretty easily and Steve used to say the coldness of the ice cream felt really good on his raw throat. We were quite young when he got sick with an eight- and 3-year-old. Seeing both the Nutritionist and Counselor, hopefully one that specializes in treating cancer patients, really helps your frame-of-mind. Did you get your permanent blue dots imprinted on your body, showing the locations of your block placement, I think it was, for the areas being radiated? Stanford found through patients recoveries, that it was important for the patient to have a 4-6-week break between cycles of chemo, which were 6 weeks in length (one chemo treatment per week) and after one month of radiation treatments (4 days a week), he would also get a break and that's why it took a full year for everything. And, take a medical leave of absence from work...don't try to work when you're going thru your treatments. The other thing he did was go to a very reputable herbalist and drank a concoction of several different herbs everyday...things we'd never heard of, and steve swore by it. A good herbalist won't ask you why you want the herbs, they'll tell you why you need them...he really studied his eyes, his hands and his feet, and inside his mouth for some time and he was spot-on with his diagnosis of why we were there and why my hubby needed the herbs - all approved by Stanford. Well, better say good night...hang in there, Vern, and pray you have a good support team with family and friends...sending prayers your way🥰... sorry, didn't mean to be so verbose

I make a shrimp and ham jambalaya. I use similar seasonings, the Trinity and tomatoes. I add fresh parsley & chopped green onion add the end. Ooooo cest bon!

Hey AB, I love that you use cast iron! My grandmother was a cook for boarding houses and logging camps and I have a couple of her pieces. (Finnish cooking). Nothing like a cast iron that has been smooth from years of daily function. My children each have a piece of her now. Cast iron is premium, but I also have pre-WW2 RevereWare. Stainless steel is an art, which I would love to see you teach skill with. My mom loved southern food so that is what I learned. But there are so many cuisines and I love that you are with that! I love the way you make it real. Right?! We are all capable of beautiful dishes. Please make some gumbo, or link if I have missed it! Many blessings and much love!

Stanford found through patients recoveries, that it was important for the patient to have a 4-6-week break between cycles of chemo, which were 6 weeks in length (one chemo treatment per week) and after one month of radiation treatments (4 days a week), he would also get a break and that's why it took a full year for everything. And, take a medical leave of absence from work...don't try to work when you're going thru your treatments. The other thing he did was go to a very reputable herbalist and drank a concoction of several different herbs everyday...things we'd never heard of, and steve swore by it. A good herbalist won't ask you why you want the herbs, they'll tell you why you need them...he really studied his eyes, his hands and his feet, and inside his mouth for some time and he was spot-on with his diagnosis of why we were there and why my hubby needed the herbs - all approved by Stanford. I just tried the recipe. (I jumped up to colossal shrimp and added spicy sausage and green onion) It was amazing!!!!!! Thank you for the chicken broth hack. The rice is epic!!!

I make a shrimp and ham jambalaya. I use similar seasonings, the Trinity and tomatoes. I add fresh parsley & chopped green onion add the end. Ooooo cest bon!

Hey AB, I love that you use cast iron! My grandmother was a cook for boarding houses and logging camps and I have a couple of her pieces. (Finnish cooking). Nothing like a cast iron that has been smooth from years of daily function. My children each have a piece of her now. Cast iron is premium, but I also have pre-WW2 RevereWare. Stainless steel is an art, which I would love to see you teach skill with.
