I'd have to do mine separately and leave out the salt, some of the ketchup and some of sugar due to chronic kidney disease. I soak skewers then put them in my pieces, and make regular sauce for hubby. Skewers make it easy to tell mine right away. This looks good.

I have a suggestion about the rub. Instead of spraying coated chicken with aerosol oil, put in regular vegetable oil in the rub mixture. Then, use that to coat the raw chicken. I prefer that over: 1. Using aerosol oil that includes an expellent that we don’t need 2. Spraying an aerosol inevitably gets it coating on surfaces we don’t want such as the countertop.
I don't like hot spices, either. But, don't confuse chili (or chile) powder with ground cayenne pepper powder🔥. I believe Julia used a commercial chili powder which is a mixture of mild chili, cumin, oregano, garlic, etc. You can make it yourself. It's delicious. 😀
Removing the skin is mind blowing! I love BBQ chicken but always hated that flabby skin...brilliant! I can't wait to try this method!

I agree, if you are going to call it BBQ, even if it's made in the oven, leave the sin on. But I was kind of amused by "tapered breasts" ....

When you've cook out all the fat, yeah tasty crispy skin with FlAvOr, but the meat on the inside has no seasoning. I'mma try this method out.
Can you season the skin then cook it on a rack over a sheet pan to crisp it up separately? Sort of like cooking bacon in the oven.

Chili powders vary greatly from almost zero heat to cayenne pepper hot. Just look for a very mild chili powder.
