In my restaurant, tables are set in the British style, with the dessert spoon placed above the dinner plate. Is it necessary to open the cover for the dessert course by sliding the dessert spoon (Bringing It Down) to the right of the dinner plate when serving a dessert, or can I simply leave the spoon above the dinner plate? I don't think I need to slide the spoon because this is how cutlery for dessert is arranged in a british-style table setting, and there is no need to open the cover for dessert.
