Very amazing recipe Chef! I have a very small suggestion, please adjust the airflow of your burner, it will eliminate yellow flame and keep your utensils clean from the bottom as well. Thank you.
What I do is I flash fry the vegetables. Then I fry the rice on high heat again separately for 30secs to 1min and add sauce mixture of soy sauce, oyster sauce, vinegar and pinch of sugar. When the rice starts to dance on the pan, I know it is time to add the pre cooked vegetables. And mix them. I never use Basmati rice for fried rice. I use plain simple rice which is left over.

Schezwan pepper has citrus taste and spice But what about its basic taste ?? Do it has same flavour note as our desi kalimirch or has its own basic nature ??

I never boil my vegies whenever I stir fry. It gets soft itself by the steam. And yes I cook in high heat.
