love Congee. It's my every morning breakfast meal because its known to be healing comfort food. Poor working class citizens from China would rely on this to get by back in the day too. Congee is a dish that I definitely would recommend for college students or for anyone who's on a budget.

Boy you guy's are too young to remember. Bones used to be given away at the Butcher market. You walk in looking and right away he would say. "I have a lot of good Bones for you". and at the big super market, go over to to butcher who worked there, and poke your head in the window asking. Any bones today?. lol FREE I would always put something in that bucket for the meat crew. 👍✌
We have a butcher where we can still get free beef bones. And we are old enough to remember but thanks for thinking we are not. LOL

Congee, the classic comfort food! It's so good with the century egg, but while you're in Chinatown, also get a hold of some salted duck eggs. They also go wonderfully with congee. That salty goodness, yum!
Love your food videos! For "clearer broth" rinse the pork bones (to remove impurities)? Brown them before boiling? No ginger??

I suppose you could but you won’t be able to control how salty it is.

We find them in Chinese bakeries or some supermarkets, if that helps.
@@FloLum I’ll check around but we have only one small Asian market. In an agricultural town in the Central Valley of California, so options are limited.

Salted beef is not typical for Chinese congee but you could always try.

Believe it or not, it’s an actual thing!! It’s definitely old… not sure if it’s literally 100 yrs old but nowadays, they do something to the eggs to get the same effect. Either way, I’m not touching it.

Unless you’re looking for a clear soup, the “scum” hold the natural flavor and will not look as visibly unpleasant when it’s finished. Why people boil the flavor out then rinse the flavor off because it’s not pleasing to the eye and is fancy technique I guess…is beyond my comprehension. That “scum” always cooks away but leaves delicious flavor. You wouldn’t boil then cook a nice steak.! Back in the day the treatment of cooking pork was different than today for safety reasons. Pork doesn’t need to be cooked that way anymore. This isn’t your grandma pork.
