    1) Is Matt side-chaining everything to the kick?
    2) What's the mastering company he uses?

      There are other vids of his where he shows you that he does sidechain a lot of stuff to the kick - not everything though usually on the other vid its just an 808 which he uses as the sub bass

    Where are you getting the stems?

      The stems would have been provided by the label who commissioned the remix.

      They would need to be commissioning you specifically for a remix.
