How To Make Belizean Dukunu | Corn Dish

  • Belizean Dukunu is sweet tamales type dish made by grating corn on the cob and adding a few more ingredients like coconut milk, shortening, salt, black pepper and corn meal. In this video I'll show you an easy way you can make the dukunu by blending kernel corn in the can.

    It’s been a looong time since I’ve eaten dukunu. There was a lady that would walk around my neighborhood(Bze.) selling both dukunu and tamales, when I was a kid. I can still remember the sound of her voice when she yelled ‘Tamales and Dukunuuuu’, lol. Great vid!❤️❤️❤️

      I love that my mom learned the method of blending the kernel corn in the can. I hate grating stuff.

    Can you do video on how to make them with stew chicken inside PLEASE?
    I CANT FIND the recipe no matter how hard I try. Restaurants don't make them for sale. Grandmother in Belize made and sold and I have not had in over 20 years now.
    I loved the sweet and savory taste of both together.
    I don't like tamales. I love Dukunu with stew chicken inside.

    Great vid! My mother used to add bacon bits to hers and it was sweet somehow. She is no longer with us so I can't ask but do you think she added sugar or she used the sweet corn? It was a subtle sweetness...

      I’ve recently learned that some people use evaporated milk. You can definitely put meat in it. People put beef or pork.

      No cornmeal has the texture as if we used grated corn 🌽 on the cob. If you have a food processor that allows you to blend the corn without the water from the can of corn, I’d try it that way.

    If you do not mind, could you describe the way it should taste for us non Belizean folks? How do we know if we have got it right, or wrong?
    And do you feel using just the foil changes the taste? I am only guessing, but I would expect the husks to add an earthiness...

    when u just use the foil it takes away from the flavor.

    Wrong way to use a can opener. You should try cutting top surface inside edges down not outsides across, cutting everything top surface all the way around except a 1/2 inch piece, then fold lid into can. That in my opinion is the safest way to discard a sharp possibly dangerous object that can Injure a person or an animal..
