Madam, I m from Malaysia...in Malaysia we have a wide array of Indian food.. I love thisainand idli.....how I wish I cld go to yr HSE to enjoy yr idlis...they r soo fluffy...and looks yummy.....❤❤❤❤
I have been making mallige idli fir about 8 years now with the following proportions: Idli rice 2 cups Urad dal 1/2 cup Sabbakki 1/2 cup Gatti avalakki 1/4 cup Menthya 1/2 tsp Idlis come super soft. I use this same batter to make dosa also. ( Khali dosa as well as masala dosa, for the latter with some additions). I have also tried your idlis as well as batter sold in HSR layout a few times. The thatte idlis are really nice. With your batter also idlis come out very well. The only draw back I have noticed is that your batter doesn't keep even in fridge for mire than a day. It becomes frothy and sour after one day. I don't know if soda is added for the batter sold to us. My batter stays up to 4 days with no problem.
@@krishangshetty5071 avalakki added here is very little. After due fermentation I refrigerate the batter. I have not had sourness problem. I know some people who substitute avalakki with equal amount of cooked rice. I have tried that a couple of times and that also comes out well. I don't continue with it as we don't usually have left over cooked rice and why cook fresh rice for this? One friend of mine uses kadalepuri (murmura in Hindi) instead of avalakki. I have used it to make davangere style dosa but not for idli. You may want to try that.
@@oreogiri mam you are absolutely right... I also make benne dosa with murmure..... Makes puffy... But not for idli... Now again try idli with avlakki 😘tq so much 😍
