You might consider adding a "bleeder" valve to the manifold itself for instances where you need to hold a full sheet and allow air to flow. Looks like a good setup.
I did, I even bought one but it was laughably too small, so not wanting to spend a whole lot more I did this. My later videos address the issues and its working quite well now.

did you consider using a vacuum pump instead of a two stage shop vac?
