I ended up making two portions last night to experiment. First one following your recipe and second one I parboiled and let sit in the fridge for two days to dry out and the results we're practically the same! My guest and I could not distinguish a difference in texture or taste between the two methods so I think your recipe is the winner! No need to do the extra drying steps when the air fryer will do it for you. The only advantage I saw when boiling first is that the skin is MUCH easier to poke at. But with your method a sharp knife did the trick for me. Thanks relle for this recipe it's going in my rotation now

hello, I have an air fryer with an air fryer mode and bake mode. which would you recommend for the 1st 200F degrees and then 2nd. Maybe bake at 200F for 20 mins then air fry for 25 mins?

I have seen some people score/cut the skin side, just deep enough to cut the skin. Is one way necessarily better than the other? Perhaps score on both sides? I love pork belly but have never made it before... Thank you! ~Sharon
Poking the holes allows the oils to release and give it that characteristic crackly top. I've never tried scoring the top too. But I've seen others do it.
I'll be trying this this weekend so I do have time to let the pork belly dry out in the fridge for a few days....do you think I should still do the step with the vinegar in the air fryer?

I'm going to do both and see if the extra steps are worth the trouble or if your recipe tastes just as good without the boiling/drying

Preheat at 200F. Cook at 400F. Air fryers vary by brand. If your air fryer can't go that high you can try cooking it at a slightly lower temperature for a longer period of time.

Chopping off the root end and the tip of the garlic bulb, THEN smashing it makes the paper shell come off in one piece, and you don't even have to smash it that hard.
There is no way that wooden skewer is piercing that raw pork skin. You either use the metal piercing tool or you have to boil the pork for a few minutes to use the wooden picks or skewer. It's little details like that which give people poor results and then they want to know why it didn't turn out like the video.
It sure does. That's the great thing about these easy tips and tricks, makes life so much easier. One tip hold the wooded skewer near the bottom like a pencil. This helps puncture the skin and helps the skewer not break. Have a great day. Happy holidays.
why dont you use a fork for the holes….. surely u got a fork… and for slicing…. a tip is to flip it and cut to the meat and into the skin…. just saying
@@KeepingItRelle if you boil the peice in water to soften the skin then yea it will… i always do it….i put it on boil for 50 minutes with bay leaves ,pepper and salt and boil it for 50 minites … then let it kool doen for 5 mins then use a fork and poke the skin with ease you poke every bit so so its crunchy then… i put fish sauce ( filo fish sauce) and mix it all in all over the piece and let it soak all over the skin then let it air dry for 4-5hrs then put it in the air fryer at 180 degrees at 45 minutes…. and its heaven and crunchy!!! also depending how good your fryer is aswell… mine is always so perfect and very very crunchy every inch

It is just perfect for the two of us, and takes up very little space on my small countertop. I roasted salmon filets for dinner tonight and they were the best ever - slightly crispy on the outside but moist inside. Best of all, no smelly kitchen or difficult clean-up. My only complaint would be the lack of even a few printed recipes to get started. My generation does not find it easy to access the QR code and use the smart phone app. I bought a recipe book instead, which gave me the confidence to experiment.
