I *have* had real Nashville hot chicken -- from Hattie B's, in Nashville -- and it looks nothing like this. I got chicken tenders when I visited Hattie B's, with their second-hottest (Damn Hot!!) and third-hottest (Hot!) levels. Both had amazing flavor underneath the heat, the breading was fantastic and crispy without there being too much of it -- and oh boy, was there heat...! "Hot!" lived up nicely to its name (I'm going to say Serrano-level, a few times Jalapeño heat), but "Damn Hot!!" just about wrecked me -- it was at least habanero level, and was heavily plastered with the pepper spice mixture. I sure am glad I didn't go for the highest level, "Shut the Cluck Up!!!" -- I don't think there's enough milk in the whole city to quench THAT heat. I have been told that the chicken at the original Nashville Hot Chicken place, Prince's, is even more soul-destroying in its heat, but I'd have to go there in cooler times of the year -- Prince's has very limited seating and no air conditioning (at least, back when I visited).

Dry chicken isnt so bad, so long as theres enough mosture to keep it from being a chewy mess, but not enough that it becomes a gummy paste after a bit of chewing.
Sugar is a much better preservative then salt is btw. If it had that sodium as sugar then it wouldn't spoil but that much salt...it still can. xD I keep hearing thighs aren't supposed to be dry but I've never ever had one not dry....never liked them for that reason myself...I love me some legs though. :3

I had the Buffalo-Style Chicken Mac 'N Cheese the other day. Aside from being pretty sure 460 calories isn't accurate it was pretty good. I wonder if the mac and cheese just didn't handle being cooked in the oven too well (45-50 minutes is a lot of time for the pasta to absorb more liquid and get soggy).
