I don't think you can cancel the melee attack once it starts; you can only cancel the... uh... shell emptying animation after the attack. That animation isn't enforced at all, so literally doing anything cancels the emptying animation.
It's a glitch you can activate by hitting the Elephant Towers in its trunk swinging phase with the flame of your grenade. Alternatively, if in 2P, the other player can hit the Elephant Towers with the flames from the Super Grenade or Rocket Launcher from earlier in the stage to trigger the same bug. I'm not sure what causes the bug, but it consistently works every time.
I love Metal Slug 5 but sadly this game is lacking of prisoners especially in Mission 2 (7) & Final Mission (only 5), you need 10 prisoners to get it "GREAT" the lowest prisoner rescue in all Metal slug games with overall 62. Also Metal Slug 5 Is kinda rushed finished especially the mask soldier (ptolemaios) is omitted in the final mission and absence of Flame Shot
It actually takes several months of retrying, because Metal Slug is too unforgiving as a game to one life clear. The problem with Metal Slug 5 specifically is that bosses 2-5 are all RNG, and sometimes you're just screwed and have to restart. The runs you see are the lucky ones, or maybe I'm just not that good compared to others.

Stinks this game was stupidly rushed to death like Super Turrican, quite ashame too as the game would've been better if they had more time to implement more things that were cut into the game.

I beat a level in metal slug 2 without dying,but the rest I can't even beat without dying
