Sarson ka Saag/ Rapini Recipe
Ingredients:
(Rapini) Sarson Saag 3 bunches (wash and finely Chopped)
Spinach 2 bunches (wash and finely Chopped)
Methi Fenugreek leaves one bunch (wash and finely Chopped)
Green chillies 2-3 finely chopped
Fresh Ginger 1 tbsp finely chopped.
Red chillies flakes 1tsp
Cumin seeds 1 tbsp
Salt 1/2 tbsp or to taste
Purified Ghee or Butter 100-150 g or to Taste
Wheat flour 4 tbsp
Water 1L
Method:
o In an instant pot, add saag, spinach, methi leaves, salt, and water
o Set the Instant Pot on pressure setting and set the timer for 15 minutes
o When you open up the Instant pot, turn it on again so all the excess water will reduce
o Once all the green veggies are cooked, turn off the flame and cool down to the Saag a room temperature
o Add flour, green chillies, and red chilli flakes into the Saag and blend it with the hand mixer until it becomes a smooth paste. (Please DO NOT use the electric beater to mix the Saag)
o In a large frying pan, add butter or ghee to dissolve.
o Now add cumin seeds to roast meanwhile add the grated ginger to saute
o At this stage, pour the Saag into it
o Once the Saag is ready, it will leave the extra oil, and it becomes thicker
o Check salt or pepper according to taste
o Serve it with fresh chapati or paratha
(You may divide Saag into two portions and freeze one part and use it when it is needed)
