Jerms, the build looks sick. Couple ideas I’ve worked into my own stable builds: Tripwire hooks on the walls for where tools would be hung, and dead fire coral is really nice to mix in with stone / cobblestone wall textures.
I do like this style of video, working on a different sub-project every few seconds. Really keeps my goldfish brain entertained.

Hi jerm, the top of the tower could be a pigeon house to send messages since the letters could travel by horse to and connect with a pigeon message sending system (using parrot I think) would be cool to decorate it with those details
The tower could be where a stablemaster sleeps

Glad to see you back, Jerm! Stable build looks amazing! A good horse idea that I have is Chief. I had horses growing up and one of them was named Chief and he was the "leader of the pack" or "top dog" so to speak. He was definitely the most skilled and able bodied horse we had. I was thinking it would be a good name for the best horse.
Really nice build and always love seeing horses getting used in Minecraft. They're my fave way to travel.
You should breed donkeys as well. If you have the perfect horse and the perfect donkey, then you can get a mule which will allow you to haul stuff around on the roads.

You should make the tower a guard tower with like a pyre of fire like they had for warning the main castle in medieval times
They use smoke and have a trail of pyres from one building/village to the next, so maybe the village next to the castle could have a pyre too

Why don’t you recommend optifine?
For me it’s performance has been worse than vanilla for years, with sodium, and other mods to recreate optifine features, I can play at 30+ chunks with about 60 fps

Yep I’m pretty sure, would it really be that interesting to watch me empty a bunch of rooms with sponges then place a bunch of soul sand on the top of the monument? I recorded it with replay mod but it was super boring, I guess I should’ve shown the final product though, that’s my bad
