Growing up Italian we know the difference between eating them fried before they get simmered in sauce, and the way most people think of them...cooked in sauce. I love them both ways, but wow how nice to have them just plain fried with a dash of the cooking oil & drippings over them on Italian bread. My grown kids still come home asking for a fried meatballs and a green salad with oil and vinegar for dinner. It makes me happy to do it :)
Truth but I actually prefer the slow cook in the gravy. The fry toughens the meatballs so they don't get any of that beautiful tomato mix. I might make them fried if it's a dish that stands alone. Looks beautiful though, mangia!
Holy shit my grandmother taught me this 40 years ago almost to a t she always said don't overmix it n she baked them for 15 minutes n let the juices go into the gravey my daughter's learned to roll the best meatballs to this day we still make them together much love to nana
I made his for my family and we all LOVED it I pan fried it in oil and added thyme, paprika, and chili flakes to the oil so it can take some of that in, then I made gravy in that same oil and it was delicious ! Thank you.

Lately I started using Panko bread crumbs and wet bread and they come out great...not too dry and not too moist. I sometimes used bread crumbs alone just to change it up, but they were a little dry but not bad (used less). Thanks again chef...
I made these along with my own take on his Sunday Gravy recipe (no hot sausage or wine) and it was freaking mouth watering, especially these meat balls after simmering away in the sauce for 4 hours. Can't wait to make it again!

Stale bread in salt water. Soak it in water and then ring it out. Use that instead of bread crumbs. So much better then bread crumbs. This guy is a good cook. I cook meatballs after I fry all my meat, picks up the taste.
I miss Sunday mornings at my ex's house, family was straight from Italy and her mother could make a meal from an old boot and make it taste like a 5 star restaurant. She'd start cooking early Sunday morning around 8am, had supper at 1 then all the desserts. Everything homemade from scratch including the bread.
I would do the same, fry them up for a but I would drop them in the sauce as it came a boil. I would put pieces of mozzarella on the inside of the meatballs. That was my secret when I had a date over for dinner. If you show you care about the food, she knows you care about her!
Like many viewers, I like this guy too. He is the genuine article. Some viewers have commented on his breathing. In all fairness, he is probably a restaurant owner who spends 10-12 hours a day on his feet. There is no time for a health club membership. No energy left for a walk after dinner. It’s a hard life. I hope he is well!
I gotta say, everyone has their "secret" recipe. But the ingredients he described are the right way to go! I usaullt do 4 lbs of meat mix and they only last a couple days.
I like the dried dehydrated onion and garlic idea. I'm going to pick some up at Demoulas the next time I go shopping and utilize it in my next batch of meatballs. I have to admit though; I don't fry them ahead. Just put them right in the sauce to cook, which I find captures the flavor from the fat rather than leave it behind in the pan. But that's just me. Either way, those look fantastic.
My favorite cook...... NEVER TRUST A SKINNY COOK.....also learned how to pronounce corect the ingredients.....meat balalhhhss.....porhhhh....vealhhhhh... Thank you Chef...
My Mother, grandmother, most of my aunt's were/are obese and traditional Italian Abruzzese and Naples cusine cooks. 5 course meals were the norm at most get toghethers and Sunday dinners. I should have paid more attention to thier efforts. Now I have to peice toghether the recipes and cooking styles from other sources. My father was from South Philly and one of best cooks I've known. Man, they knew food. No shortage of everything outside of Italian cusine either.
Clemenza, please make more videos but take care! Meatballs, gravy, garlic, basil, romana cheese, onion and fine wine. The best of life! Get you hands up there! Fun with the kids. Don’t forget, you can also throw in some kids in the recipe too there, it’s a lot of fun! Eat and enjoy! Lol

Our family always used the broiler. Cut down on some of oily factor from frying.
True, once you put them in the sauce you don't have those crispy edges no more!
To this day i tell my mom to leave me a few before throwing them in the sauce
