I think your combo of water pan and very low cook temp (210 vs more common 225 - 250) explains how you get it so moist and tender without wrapping. my advice would be to prep your sides while your meats are smoking. heat your oven to 175. wrap or cover your meats with foil when done and place in the oven. cook your sides while your meats rest and serve all at once. that’s my short explanation anyway

That’s a new double green egg table for a large & XL. i’ll have a video for that in March after I wrap it up. Waiting on countertops.

No, I still have it. I might sell it in the spring. Undecided at this point.
