I'm not sure how your age is relevant. Remember, I am building boats for customers, as such I am putting extra effort into making them extra nice. Even if you don't do a perfect job, you will end up with a beautiful boat. Don't let the abilities of someone with 30 years experience dissuade you from starting. 30 years ago, I was just like you.
Working on the plywood cutout approach now, and it is a lot of work cutting out, and fairing, and it doesn't deliver a light result. If one has a shop and can go to it for a few minutes a day, it soon gets done. But if one was making a lot of boats, a molded coaming and seat is a lot better. Say a club wants to make a bunch of sea kayaks, coamings and seats are a big task.
