Hi Hendrik, I just purchased your e-book for the second time. The first time I paid only 5 euros, not knowing what to expect. But when I read it, I felt I had paid far too little. This is by far the best book about baking bread I have ever read. Thank you for doing all this research and writing it down in a very understandable fashion!

I've been youtubing around this topic for a few days. Sleeping on it - where's the tech? I love how the Pilgrim Fathers carried their precious sourdoughs across the Atlantic - I suppose they weren't to know that wild yeasts were as abundant in the New World as the Old. And earth mothers with folksie music have as much right to try their hand as the next guy - but it's all a bit too much how great-granny did it before the age of fridgeration. In a crowded field this channel looks good. Finally some science!

Herr Kleinwachter, gluten tag from the USA! I have a problem I hope you can solve. I am using a firm starter made of approximately 1/3 whole wheat flour and 2/3 bread flour. I have used starters that were as little as 10% and as much as 100% whole wheat flour, but the current version seems to have the best level of activity, which expands approximately 250% before I use it. But when added at a rate of 10 to 20% to my dough, with hydration levels of 70 to 80%, there is simply no activity. This has happened many times. I ferment (or try to ferment) at about 24 deg C, and I add only non-iodized salt at no more than 2%. PH is 4.26 in my current batch, but it’s been sitting at room temperature for its bulk ferment for about 11 hours now. The water used is carbon filtered to remove chlorine.
I have watched ALL of your videos, as well as others (like Gluten Morgan), and cannot see any problem with my ingredients or technique. Is there any reason that an active starter simply fails to ferment a dough using the same flour that made the starter, and at the same temperature that the starter fermented? Vielen dank!

Hi, is there any option to make this project open for translations? I'm from Poland (hi, neighbour!) and I'd love to share your knowledge with my older family members. Unfortunately, it's all in English, which for me is not a problem in particular, but for others may be. Maybe there is an option to put that PDF into some tool, where it'd be easier to participate in translation project?
Hi hi. İ am watching your channel daily basis to catching up with the bread story.
My oven maximum temperature only maximum 190⁰ celcius only
İ use granite. Don't have Dutch oven because I am not able to lift up heavy things. Will it possible to have good sourdough bread? İ still learning though. Till today the bread is dense but beautiful holes in it. İ never give up😅.
My area is hot weather so the bread always turn too sour. İ will watch your old videos and try again. Thanks. And congratulations
