My best guess as I’m halfway thru watching this is that fast casual “mexican” and straight up fast food places use their queso mainly in or on other things. The queso is designed to compliment, not over power menu items like their burritos. Sure- it’s available as a side with chips, but that’s not the primary usage. For places like Chilis, BWW, etc, it’s intended from the start to be a dish all it’s own, so they should go harder with the flavor and the “chunks” as Rhett said.

Funny how they call it “Queso” (Keizou) when it literally means cheese in spanish. Closest thing I can think we have in central Mexico is “queso fundido” (melted cheese), wich usually is eaten plain, with chorizo (choriqueso) or mushrooms (champiqueso). Queso oaxaca or chihuahua are mostly used, and not chips (totopos, here), but mostly tortillas to make some tacos. Love you all.
For the record, I have a filling between my front teeth! I had a pepper-grain-sized hole there in otherwise healthy teeth. It was very noticeable. Instead of causing more damage for veneers, etc., they just put a small amount of filling in. 😊

How about you do blind (or just regular) taste tests of tamales?? There's enough chains that have them, like El Torito, but also some fast food places do (although some only seasonally). Or crunchy tacos. Or, ooh - margaritas!!

Qdoba's three-cheese queso hits super hard when you get some extra salty chips. Those things are like crack.
