With a staff of 8 a hotel i worked for did around 200 weddings in 2023, thousands of other events, at times 1 person would do a plated dinner for 200, with pased apts. Not possible without these ovens. I will admit it was extremely difficult but we did it. Now i took a job as a line cook and the largest banquet is 240, huge pay cut from chef to cook but worth the sanity. If they decide to get a combi oven ill definitely push for rational. Being able yo control it willth your phone helps when your multiple floors away and elevators are backed up because housekeeping is doing a shift change.
