      Thank you. You need to make the lacto-fermented syrup. It takes a week to make it, but it is worth every drop. Trust me. The syrup brings so much complexity to the cocktail. It's amazing.

    Georgi! Great looking drink, and I'm sure it's delicious! My question ... does the Vegg White add body and mouthfeel as well as foam, or only foam? Thanks from Northern California.

      Thank you. The Vegg White is thinner than the egg white, which works better in this cocktail as it keeps it light. In general, it has less body compared to egg white.

      You can use dry sherry. It's made from grapes and not rice, but it is the closest you can get.

      By the way, if I didn't have the time to make your strawberry honey syrup. Could I just mix monin's strawberry syrup with monin's honey syrup?

      @@curtisbannerman2934 you can use Monin, but it will change the cocktail completely. No salt and it will be more sweeter than using lacto fermented syrup. Give it a try and maybe adjust the amount of Monin you using. Enjoy!
