I make a Sean Brock recipe that's similar but his has you make a garlic lemon roux at the end to put on the chicken which is just a show stopper!

@@Noobert Yep I do! It's well worth in IMO. Before I was literally spending several hours per video trying find the right songs for videos and often times they weren't copyright free (or didn't really fit what I wanted). Epidemic solves all those problems.
@@EthanChlebowski I love epidemic sound XD I think they have sfx too. Im listening to you break chicken bones I wasn't prepared lol I think I might be squemish when it comes to cooking. Do you have any videos for making homemade pasta by hand for if you don't have expensive kitchen equipment?
@@Noobert Yep they do have sound effects too! I worked in a tick tocking sound in this video haha, but overall I let the food be the sound effects! The chicken bones cracking can be a little harsh for some haha

I'm gonna dry brine instead, I have enough space in my fridge for a rack with a chicken on it, not a big ass pot full of water, also wet brining fills the skin with water
I need a cast iron skillet to try this recipe 😭 would a regular wok/pan work just fine?
before we got our cast iron (highly recommend to invest in one!) I'd put a cookie sheet with a cooling rack inside in the oven when I preheated. after browning the chicken on the stove top in whatever pan ( I've used both nonstick and stainless, but not a wok) transfer the chicken breast side up to the preheated cookie sheet and put in the oven for same time. Cast Iron is definitely better and less dishes but this still resulted in amazing chicken and it's how i still do my turkeys because they don't fit in my cast iron :)
