    Thanks for this great video, could you please explain why you added salt?

      Salt changes the texture of the water and makes boiled tea smoother. You want to add only a very small amount so the tea doesn't taste salty. During your next boiled tea session drink a few bowls without any added salt and then add a very tiny pinch of salt and see if that changes the tea. The difference should be quite obvious.

      Is this glass alcohol burner the same size as the small one in the gongfu kettle or the larger one in the new GTH kettles?

    I recently bought some aged white tea and I want to start boiling it, after a few gong fu brews. As I understood from this video, you only pour out around half the quantity of the tea, leaving the root of tea in, so you top it of for the subsequent infusions and bring it to a boil for a few minutes, and repeat until you finally pour out all the tea.

      We would recommend a cauldron. They also work great. You can get oen on our site. Then you can boil the day away--as long as you like!

    No. We only boil Sheng and Shou Puerh. Usually boiled tea is a way of serving tea to large amounts of people. There are some exceptions to that: Certain Puerhs are better boiled. Also, it is nice to boiled the spent leaves of any fine tea, Puerh or otherwise...

      It adds dimension and depth, as well as umami. It smooths out the water and reduces a certain "boiled" flavor. It is just a tiny, tiny bit....

      @@timothyjadet Yes; it is even mentioned in the oldest surviving book on tea, the Cha Jing, which we translated. Search our past issues....
