Not sure if this will help. I have seen similar on you tube utilising the drain hole. If it does have a drain hole and the probe does fit with clearance then this method might help.
Using a piece of rod (6mm studding, longer than depth of fridge) work it from front to rear through the foam. Of course if there is any obstruction from cooling pipes dont force it. Anyway if you do manage to make a path from front to rear, thread your probe through, then down back of fridge, and up the drain hole. Probe is now inside the fridge.

Thanks for the reply, I used the drain hole for the sensor when I made my fermentation fridge but this time I am measuring the freezer temp and it doesn't have a drain hole. So far it appears to be working with my "jam the sensor in the hole I made in the foam" method :). If only I could pull the top off the freezer but alas it is well foamed on.
