  • Austin-based restaurant Nixta Taqueria, run by Edgar Rico and Sara Mardanbigi, has drawn a ton of attention despite only being open for less than five months before COVID-19 impacted the dining scene all across the country. In June 2020, Nixta garnered a spot on the top 10 best new restaurants in the U.S. by Food & Wine magazine. Not bad for a small taqueria located on the corner of an East side neighborhood, away from the award-winning restaurants that pepper downtown Austin.
    One of the main reasons for the success? Chef Rico's duck carnitas creation, which was named one of the top 10 tacos in America in Bon Appetit's Taco Nation issue.
    With citric, spicy salsa cruda, cilantro, shaved watermelon radish and white onion, Rico layers flavor atop rich duck confit grounded by a perfectly chewy, earthy nixtamalized blue corn tortilla. The corn, sourced from indigenous farmers in Oaxaca, Mexico, is easily the shining star day in and day out.
