If you disable the “Guaranteed Critical Hit” buff on the Defender then they can hit you. So be careful not to intercept. You can even intercept with a heavy attack too

Because some Champions cannot hit crit, and Ebony Maw only misses always if the opponent has guaranteed crits

No, You probably dexed or intercepted Maestro, those disables Guaranteed Crit Node.
