@@TastefullyGrace you definitely have fun making it and there is a lot to be said for that. My great grandmother, grand mother, and mom make used to make it every holiday. We descend from northern Italy so maybe your version has different roots.

I think you just need to cook it longer and add a little cream. It shouldn’t be that chunky in my opinion.
