  • How to make jambalaya rolls
    Here is a recipe for Shrimp & Andouille Jambalaya, that I use to make egg rolls with. I actually use to sell these at my work place, and I sold out daily! Very big hit with the guys at work. These make a perfect football party food, or any party food as for as that goes! A little Asian Cajun fusion that will have you go back for more. Enjoy!
    FOR THE JAMBALAYA:
    Grape seed oil 1⁄2 Cup (8 tbs)
    Yellow onion 1 , chopped finely
    Bell peppers 2 , chopped finely
    Celery stalk 2 , chopped finely
    Pepper To Taste
    Sea salt To Taste
    Green onion 3 , chopped finely
    Garlic clove 3 Medium, peeled, finely chopped
    Andouille sausage 2 Pound, cut into pieces
    Shrimp 2 Pound, peeled, deveined and chopped
    Chicken stock 4 Cup (64 tbs)
    Water 4 Cup (64 tbs)
    Converted rice 4 Cup (64 tbs)
    Cayenne pepper 2 Teaspoon (Optional)
    Cajun pepper sauce 2 Teaspoon
    Parsley 4 Tablespoon, chopped finely
    FOR THE ROLLS
    Egg roll wrapper 1 Pound
    Egg 1 , mixed with some water
    Oil 3 Cup (48 tbs) (For deep frying)
    Directions
    MAKING
    1. In a skillet, heat the grape seed oil and add in the chopped onion, green onion, bell pepper, celery stalk and garlic. Saute for a while and season with salt and pepper.
    2. Transfer the vegetables to a large pot and add in the andouille sausage, cook stirring. Add in the shrimp and allow to cook.
    3. Pour in the chicken stock, water and converted rice. Stir in the cayenne pepper(if using) and cajun pepper sauce, mix well and let it reach a rolling boil reduce the heat and allow to simmer for about 45 minutes.
    4. For the rolls: place the egg roll wrapper on a flat surface and place a tablespoon of filling in the center, now wrap to form a roll and seal the edge with the prepared egg wash. Repeat with all the egg roll wrappers.
    5. In a frying pan, heat the oil and gradually drop the prepared rolls. Fry until golden brown and remove on paper towels.
    SERVING
    6. Serve hot with remoulade sauce.

    Killer idea! Love andouille and jambalaya is one of my favorites. Never had it in a roll before. LOVE IT!

      Thanks Greg. I actually drummed up this idea many years ago, when I was selling food at work. All this time I thought I was the originator of this, but earlier, I Googled Jambalaya Roll, and to find out, it was thought of back in the 80's, or at least on record. I appreciate it brother!

    Looks awesome & I'm from Louisiana. Want to try a super tasting Andouille Sausage... get some from Bailey's Andouille in LaPlace, Louisiana. The very best and they even have Ground Andouille Sausage !!! Good Yeah Shea!

    When I was driving a Semi truck I grabbed some of that exact sausage running through Louisiana. I carried a compact little hibachi type charcoal grill on my truck. I happened to be stuck at one of my stops for a couple hours and I decided to break out the grill and cook up the sausage. I had the guys from the warehouse coming out and asking me if I had an extra sausage. I ended up cooking it all up and feeding a bunch of warehouse guys. LOL. When I got back home in Jacksonville Fl, I found out that my local Publix carried that sausage. I grilled some up for my friends & neighbors and they ALL loved it. I have to see if they still sell it. I haven't had any for a while. Damn good sausage, especially on the grill.

    We tried this recipe. It's is amazing. We did change out the hot sauce. I used my own homemade hot sauce in the recipe. Channing loved them. He enjoyed making these with me.

    These look awesome!!! I had something like this at a place in Waco TX called buzzard Billy's swamp shack. They called them big easy rolls. Think they add a jalapeño cream cheese with the jambalaya filling. Can't wait to try to impress my friends with these :) thanks for the video!!! Gotta find where to get frog bone products in Oklahoma now lol. Hopefully academy or gander mtn will have it.

    How much would you sell them for? Seems like if you got a good deal on the shrimp/sausage the profit margin would be good. I'm going to try this. Wrapping them up in foil after frying is the ticket? Thanks they look good.

    what a great recipe. how long will they stay crisp? these would be a hit anywhere. that stock pot was huge that you used.

      You can actually put left overs in the fridge overnight, and when you heat them back up, they will still have a crisp to them, and just the right amount of chew like an egg roll has. They are really good :)

    Mr Rus when you get a chance try this place for some of the best andouille. This is all I use for red bean, Jambalaya, Gumbo...etc

    @smoky ribs - Just made your jambalaya - had some gator andouille and used chicken instead of shrimp (had no shrimp on hand). Gator brought out a nice seafood taste to the jambalaya. Used a little of your cajun seasoning mix from the grilled shrimp po boy recipe. It was fire - Use that seasoning in a lot of dishes now. Thanks for all your hard work - about 4-5 recipes of yours are now added into my cook book!

    Hey Rus, tried this recipe out today and had an issue with the rice. Used Uncle Bens parcooked and followed your recipe to a tee still turned out a little mushy not fluffy at all Is there maybe a trick or something I did wrong flavor is awesome but just a little bit pasty.????

      +MrTlcsce Hmmm, I'm not sure. I've never had a issue like that with par boiled rice. Maybe next time cook rice, and then rinse under cold water to remove any excess starch. I think that is where the pasty texture may be coming from

      Lol! I would hook you up with some of these if I could. I sold these back in the mid 90's, and they sold for 1 dollar each. I also sold chili dogs with my homemade chili sauce, bbq sandwiches, and polish sausage dogs, and on Fridays I would also include homemade beef and cheese enchiladas. It was a lot of work, but by the end of the week it was worth all the effort ;)

    ok i just made these. 1/2 batch very good half batch made 30 of them.idid add a little old bay not much thou. tip wrap and fry. dont do to many ahaed of time cause they stick to every thing .lol

      You can probably do more before frying as long as they don't touch each other, and lay them down flat on non stick foil or wax paper, then fry. Wow, 30 is a half batch? You are going to have a ton of them :D Enjoy!

    Instead of using just rice would it mess it up if I used the zatarain jambalaya mix, cooking these for a large party.

      You can absolutely use Zatarain's boxed jambalaya mix. I've used it many times.

      I sold them years ago. I would wrap in deli wraps and then into foil wraps. Once I was at work, I had warming ovens that I transferred them to. Easy to make, and you can even used the Zatarain's boxed jambalaya mix. Still pretty good with a good quality sausage and shrimp added.

      I really don't remember what brand, but I got them at Walmart. You can catch a glimpse of the package on the video, but I couldn't see the brand. Yes, these bubbled up really nice. If I spot them next time I see them, I'll let you know what brand :)

      Thanks Boss, I got a brand from an Asian market. It came out smooth an crispy. But if I refrigerate it for the next day it turns out really soggy for some reason. I appreciate the help though.

      +Joao Paulo I use seafood "stock" in gumbo, étouffée, and many more dishes, but prefer chicken stock in a jambalaya of any kind. Do how you want!
