When I make stuffed pumpkin I make a mix of pork, sausage, and rice (brown and wild). I also sometimes add raisins, figs, or dried apples along with autumnal spices to add sweetness.

This is my kind of meal. Makes me feel like I walked into a picturesque tavern, filled with ale, big fireplace and of course a beautiful pumpkin stuffed with meat.
I think im going to do my version with lamb meat. since sweetness works well with chunks of lamb and i just love lamb. then season with cumin, salt, pepper, thyme, and use a dry cider plus the red fruit kronenbourg beer into the pumpkin. im also thinking stuffing the inside with some basic fragrant vegetable as well.

This dish is nothing short of stunning. My family will go b*oink*ers over this.
Reporting back, I found that at around 3 hours in the oven, my pumpkin split open at the side and was no longer a "show stopper." But I put the meat in it's serving dish and picked out the pumpkin skin from the pyrex baking dish and ran everything through a food mill. What resulted was one of the best Pumpkin soups I have ever had. Also the pork was pretty good.

I substituted a pork sirloin roast with great apprehension, fearing that it was too lean and might dry out. It turned out amazingly moist and tender and delicious.
