Hey guys. Bengali here. We eat rice a lot because we have a very rich river delta where the Ganga river system branches into numerous distributaries (same in Bangladesh). Rice grows well because it needs flooded fields which are readily available. The soil is rich clay which traps water and has high caloric density in crops grown. Oh btw we also have a lot of freshwater fish from rivers and lakes.
Bengali people love rice because Bengal's ecosystem that influenced its agriculture . Entire Bengal is full of rivers, the soil is wet and has large proportion of clay in it and it rains a lot in eastern and southern India, hence making it fit for cultivation of rice. So, rice and fresh water fish are staple here whereas the soil of northern and western side has less clay and more sand than eastern side because of being closer to desert, so, those lands are fit for cultivation of wheat, corn and other cereals. Hence breads are predominant in those areas. 😊

Wheat is consumed mostly in the areas where winters are really cold and before harvest season it transitions to hot. because that’s the ideal condition for growth of wheat. Typically you will find this kind of weather in north India. In rest of the places people eat rice more. The only exception to this is Kashmir which is extreme north of India and becomes very cold in winter but people majorly eat rice there

Yeah. That's why it is kachchi biryani. Where for other biryani meat is 70-80 percent cooked, then layered with rice and cooked. In kachchi biryani raw meat is cooked directly with rice. My two fav biryanis are Kolkata Biryani and Hyderabadi Biryani
My mom used to make it on birthdays. It was a big production, there used to be four helpers and it would take hours but when the huge pot was opened, the aroma was worth every minute spent on it.
BIRYANI 😍😍😍😍. Lots of biryanis in india. So i am listing out some which are popular in south india. DUM BIRYANI, DONNE BIRYANI, HYDERABADI BIRYANI, CHETTINAD BIRYANI, AMBUR BIRYANI, TALPAKATTI BIRYANI, POT BIRYANI, BAMBOO BIRYANI, ANDHRA BIRYANI, MALABAR BIRYANI, NAATI BIRYANI. These are some of the biryanis i come across from bengaluru city alone.
Wheat is the major crop in the north and northwestern parts of India. That's why they have wheat-based breads like roti as their staple. Everywhere else, Rice is the major crop.
We mostly cook Biryani at home we barely eat Biryani in hotel yeah but if eating hyderabadi it's gotta be in outside cuz its hard to make at home...Biryani is Biryani no one can takes a place of it...it's so amazing how Evey single person make Biryani test beautifully different ..
Famines form a key part of the indian experience. India has seen many famines over hundreds of years, and that has influenced our traditions. The availability of food is never taken for granted, even if you're rich, as nature tends to have her own plans.... which is why every single meal, grain is considered a blessing and food is given a high level of respect.... I find it beautiful. I remember getting spanked as a kid for stepping on a few grains of rice . Food fights in Indian cultures is good reason for a thrashing. 🤣
Rice, coconut and fish get more and more dominant as you move towards coastline in India. In regions far from it, you will have more wheat or some other grain which is then turned into different kinds of breads.
As per an Indian folklore, Rice is called as the king of grains because once you start eating rice you start to avoid all other things in the plate which is why bread items ( roti, naan, etc) are eaten during the start of every meal and ends with rice mostly in Indian cuisine. 😀

Wheat grows well in North..rice well in South and East..Bengalis and South Indians eat rice as staple food..biryani is ultimate food invention...yes please do try in one of the restaurants mentioned here in the video when you visit...it is also one of the spiciest biryanis though
Costal states in India (Tamil Nadu , Kerala, Andhra Pradesh, Odisha, Bengal) main dish is rice. Because these states grow enormous rice . Andhra Pradesh is called the rice bowl of India.
Rice is a staple in all of Eastern countries. In India, certain areas of north, people eat wheat in the form of roti/naan and sometimes also have rice. But for rest of the country rice is pretty much the staple and sometimes they couple it with roti.
If you learn main trick it will be easy, for Hyderabad biryani the main trick is meat should be in bottom, rice you sprinkle on immediate top of meat should be 50 % percent cooked, and then remaining rice should be 60% cooked rice. For biryani recipe get spoiled either by uncooked or burnt meat, or over cooked or uncooked rice. We cook in US in a aluminum tray using oven for dum 250 f.
I love ur videos🥰 Do come to Chennai-Tamilnadu once. The biriyani here is completely a different flavour.Tamils often cook at home. Two restaurants to taste biryani are 1.Buhari chain of restaurants ( Non-veg restaurant ) 2. Thalappakatti Biriyani (Non veg restaurant) Both restaurants hv different recipes and differs mainly on type of rice used. Buhari use basmati rice. Thalappakatti use seeraga samba ( Naturally flavorful traditional rice breed). U must try for sure.Mindblowing flavors.
Costal ppl love rice because it cools your body in hot climate so Kolkata or South Indians love rice and Northern India loves rotis because it does the opposite.
Bcoz RICE needs "1".. lot of water to grow nd east recives lot of rainfall... North doesnt recieve much rainfall... "2" rice is tropical crop nd it need avg temp around 25 degree where as wheat around 10 to 15 degree... North is way more cooler than east
You can see different biryanis in hyderabad 1.Shah Ghouse Biryani is famous 2.Mandi Biryani (Arabian Styles) 3.Shadab Biryani one should taste biryani at these restaurants.. Each restaurant comes up with unique taste of biryani. Daily minimum 50000 kg of biryani is served in hyderabad, it will increase in weekends

Yeah. That's why it is kachchi biryani. Where for other biryani meat is 70-80 percent cooked, then layered with rice and cooked. In kachchi biryani raw meat is cooked directly with rice. My two fav biryanis are Kolkata Biryani and Hyderabadi Biryani
you guys know a lot about India. I am impressed
My mom used to make it on birthdays. It was a big production, there used to be four helpers and it would take hours but when the huge pot was opened, the aroma was worth every minute spent on it.

Wheat is the major crop in the north and northwestern parts of India. That's why they have wheat-based breads like roti as their staple. Everywhere else, Rice is the major crop.
Kolkata likes rice because the soil is conducive to rice growing. The large house at the end of the video is The Taj Faluknama Palace Hotel
Korbin and Rick please come to Hyderabad..welcome
Rice, coconut and fish get more and more dominant as you move towards coastline in India. In regions far from it, you will have more wheat or some other grain which is then turned into different kinds of breads.
As per an Indian folklore, Rice is called as the king of grains because once you start eating rice you start to avoid all other things in the plate which is why bread items ( roti, naan, etc) are eaten during the start of every meal and ends with rice mostly in Indian cuisine.
😀

Both restaurants hv different recipes and differs mainly on type of rice used.
