Dear Anoma, Thanks for your cooking tutorials and practicals. All instructions are very easy to follow. So far I have tried three food items and they came really well. I have never cooked before and my wife and kids are really surprised of my sudden ability all thanks to you.
Take 500g fish cubed . To that add 1/2 to pepper powder 1tsp salt and 1/4 tsp turmeric add a tablespoon or two of vinegar and water too and let it cook or boil in heat ....you may need to stir it to evaporate the water but not completely save some sauce . Separate fish and the boiled sauce once the fish is cooked. to that sauce you need to use it latter to the sauce then add 1 tsp mustard seeds and pound it with 1 tsp of vinegar . Then add the pounded pulp to the sauce above strained out taste the sauce you may need to add more Pepper more salt more vinegar but only tasting it will say what needs to be added . Then in another pan to heat with oil or butter and add garlic ginger onions pandan leaf or rampe and curry leaf when it starts to slightly become translucent add the sauce and the fish and stir fry .let the fish absorb the sauce . Then take off the heat . Lastly add more onions and green chilled split into 2.close and let sit . You may add about 1 tablespoon of coconut milk or water to it to increase the taste . Hope this helps....This is what anoma's mother use to make .
Your only issue is repetition . You repeat the same words again and again. You may need to prepare with a script first. Then it will be great. Accept it as just a suggestion please.
