    Thank you for the idea of using just 10g starter and then doing an overnight bench rest. I've been struggling with timings that work for me, and this is it. SLOW fermentation, yum!

      @@reginatan9219 I use a pizza stone, but of course it doesn't come out with a hard crunchy crust as do his. If you look in thrift stores and flea markets, they can be purchased for pennies on the dollar as compared to new ones, and the nice ironware like Fine, Stargazer, and a few others are almost prohibitive for price (about $200 for a nice skillet). The old Griswold roasting pots, with a lid can go as low as 20 bucks for a nice one. Best of fun with your projects.
